Ingredients

  • 2 lbs 900 g rotisserie chicken
  • 2 (8 oz.) 2 (230 g) tomatotomatoes
  • 5 oz. 140 g cooked bacon
  • 1 1 dill pickledill pickles
  • ½ cup 120 ml mayonnaise
  • 1½ cups (6 oz.) 350 ml (170 g) shredded cheddar cheese
  • salt and pepper

Serving

  • 6 oz. (3 cups) 170 g (700 ml) leafy greens
  • 4 tbsp 4 tbsp olive oil

Making low carb simple

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat the oven to 400°F (200°C).

  2. Shred the rotisserie chicken into bite-sized pieces and place in a medium-sized bowl.

  3. Dice (cooked) bacon and chop up the tomatoes and pickles. Mix all three together with the chicken. Add mayonnaise and ⅔ of the cheese and stir. Season with salt and pepper to taste.

  4. Pour the mixture into a greased baking dish. Sprinkle the remaining cheese on top and bake for about 20 minutes or until golden brown.

  5. Serve with leafy greens and olive oil.

    This was good, but not quite 5 stars for me. I made it pretty much exactly per the recipe, but I think it needs something more to jazz it up a bit. Maybe some onion, more spices. Actually, it might be very good with a lot of curry powder in it...I think I'll try that next time. I didn't have a rotisserie chicken, so I cooked about a pound of boneless chicken thighs via the sous vide method, then cut it up. All this said, everyone liked the recipe so I've put it on my favorite list and will tweak it a bit more next time. Definitely worth re-making.

    I loved this recipe just as it is. The only thing I messed up on is the temperature of the oven. Somehow, in setting the timer I turned off the oven. I guess it held enough heat to warm it and melt the cheese. I actually think it was better because the tomatoes stayed together and you could taste everything in the recipe. The mayonnaise just fit the bill, because of its tangy flavor. It was excellent. I've lost 45 pounds and I am trying new recipes. This goes with the hamburger/cheese casserole for do again next week

    This is good as-is, but let me tell you a story. Started making it. Realized I had no pickles. Didn't want to run to the store, so raided the fridge for ideas. Voila - poblano peppers. I roasted a couple over my gas stove burners (can be roasted in the oven), chopped 'em up and mixed 'em in and into the oven it all went. Guys, this is where the magic happened. The smoky flavor of the roasted peppers permeated the whole casserole but very subtly, not overpowering. It paired with the smoky applewood flavor of the bacon and WOW! It was so good, my grown son nearly cried (truth). It was like a profound religious experience. Okay, maybe I exaggerate there, but my sweet lord, was this good! Try it if you like poblanos; you will not be sorry. This just went into our regular meal rotation.

    You can omit the bacon or use turkey bacon.

    I jazzed mine up a bit and left out the bacon. I used canned tomatoes (only like 2 carbs worth). Used a leftover cornish game hen and halfed the recipe. Used various cheeses (we like cheese lol). I spiced it up a bit with some ranch (still used a bit of mayo) and some everything but the bagel seasoning.

    Nobody says what size is the chicken for four people! Small, Medium, Large???

    Would be keen to have some kind of weight as that's how we buy them in England.

    Your Muslim butcher should be able to tell you what to use. Sadly very hard to find any substitute for bacon so best probably just to leave it out or perhaps you can find smoked turkey slices, or else put in some kind of seasoning that is compatible with Islamic diet. Good luck!

    Generally speaking, a serving of chicken would be 4-6 ounces, before cooking.

    I am glad you all liked it, I made this recipe exactly according to the directions and did not like it at all. My husband did not even eat it. My own dogs were hesitant to even eat it. The other things that we have been trying have all been very good but this one. YUCKY!

    If you decide to cook your own, you can use 4 chicken breasts, and then you don't have to worry about de-boning or cleaning the whole chicken.

    I can eat eggs, so no mayo for me. Would sour cream work in this?

    The recipe has not been tested with sour cream. If you try it, fold in the sour cream gently so as to maintain its texture.

    If you don't want to try that, you could mix everything except the tomatoes. After putting the mix into the casserole dish, you could add some tomatoes to just half the dish so your husband wouldn't have to eat them.

    I made this recipe again after first trying it 3 years ago. This time it was a huge hit due to the slight changes I made. Instead of the pickles, I used a small 4 oz can of small green chilies (mild). Chopped them up, then also added a few slices of chopped onion. I used chicken thighs cooked sous vide, and I think this gave more flavor as well. I used a thick and flavorful cherrywood type bacon, and added more salt and pepper. I used only one roma tomato chopped up...less juice to contend with later. Mixed and baked everything as per the recipe. These small changes made this a fantastic dish, and this time it got a definite 5 star rating from the family.
